Appellation: Chianti Riserva DOCG Grapes: 100% Sangiovese Vineyard: Casaccia and Poggione Soil: Medium texture and rich presence of skeleton Altitude: 260 meters above sea level Yield Per Hectare: 60 quintals Age Of Vineyards: 25 years Harvest: Manual, end of September Vinification: The grapes are destemmed and lightly crushed, after which the crushed grapes are collected in cement tanks.
Fermentation then begins and will take place at around 25°C.
After about 14 days, racking occurs at the end of fermentation and the wine is racked to separate the heavier lees.
Spontaneous malolactic fermentation follows. Maturation: Afterwards it is transferred to medium toasted French oak barrels and kept on its lees called fine.
